Tonnara : tuna is caught by an elaborate and age-old Andalusian technique of setting nets in a maze that leads to a central pool called "copo". In Sicily, the maze of nets (and also the place where the net are placed) is called Tonnara and the method to kill the fishes is called Mattanza.
The maze uses just two net lines, called "raveras". One net is connected to the shore and other line is secured in deeper water. Those lines have smaller oblique lines which leads to the central pool. Tunas are not able to see the exit from the central pool and remain inside. This simple maze works because tuna tend to go into the Mediterranean during spring and the beginning of summer. The floor of the central pool is raised in order to catch the tunas and when that floor is up, there is little room for tunas and they are then caught easily and slaughtered.

Marzamemi: THE STORY OF A charming village.

It 'a small village which lies about 3 km from Pachino. Marzamemi is an Arabic word which means Rada of doves. The name derives From the abundant pace with these birds in spring. Some people derive from March-Porto, Memi-Small: Small Harbor. The township is wet almost all around the Ionian Sea and the level is below the sea. Ionian Sea, you meet the two islets of MARZAMEMI: the small, on which stands an elegant villa, owned by the family of Prof. R. Brancati, the great, which is like a curve in a recent entry port formed by the same small island and a very strong arm to concrete walls, which extends into the sea.

The inhabitants of that township are all dedicated to fishing: it was already well known since ancient times for the tuna fish, which was the second largest in Sicily after one of Favignana (near Trapani) and now works intermittently every five years. The few families who live there are almost all Oriunde from Syracuse (some from Avola), reflecting a national costume, kind and deeply religious.

Marzamemi is as old as the tuna fish. In 1752 were built the palace of the Prince of Villadorata, owner of the entire historic center of Marzamemi, and the Church of the Trap. Marzamemi has on its coast, two small natural harbors known as "Blackwater" and "Balata". Navigation, especially between Marzamemi and Genoa has been in the past, very active in the wine trade, especially before the construction of the railway-Marzamemi-Pachino Noto-Avola-Siracusa. Marzamemi can be considered as the beach Pachino: in summer, in fact, its population increased significantly the number influx of holidaymakers, from Pachino, and especially from foreign countries.

There is an ancient fisching village, unique in the world, where Tuna once were caught with sistem called Mattanza. Here, the Tuna were caught, carried by hand to the village piazza and processed immediately. They were clened, cut and split into piaces to be sold and eaten.
Some of the parts of the Tuna were sold fresh fish to cook and eat immediately. Other parts were used for various product such as the dried Tuna roe ( BOTTARGA ( which, after becoming ard and gets grated over pasta as one would grate cheese. It is also cut very fine, put in on bread and seasoned with olive oil and lemon juice. These things are still done still done at Marzamemi ( due to a recent law, THE KILLING OF THE TUNA is no longer done in pubblic ) and BOTTARGA is now a product that is precious, expensive and very difficult to find. This way of working the Tuna is not often seen by the pubblic anymore. After a photo session and visit we will enjoy a tasting of their wonderful products.



Description tour full day:
A fine tour to discover the cradle of Nero d'Avola, the cellars of the wine road of the Val di Noto and Trap.
Arriving in Marzamemi to 10.00 am, we board the ship with the glass floor to view an archaeological site at a depth of 4 meters to the shores of Marzamemi front and we could see Roman pillars left in the bottom of the sea 2000 years ago by a ship Romana. The boat trip lasts 2 hours and after that we will visit the historical village of Marzamemi pretty fishing village, characterized by the presence of the ancient ruins of the trap owned by Prince Villadorata. Visit to the producers of fish and vegetables with explanation tasting techniques. Our operators will open their gates to the laboratory where the Prince of fish and tuna, and you can see and photograph all the people with their hands and using ancient techniques employed by the fish during cleaning, drying, to step in kilns for smoking, packaging ready to be sold and eaten. Leaving the laboratory, after witnessing a spectacle unique in the world, we enter into sales and tasting room where we will have a light lunch.
The tour will continue towards a winery owned by the tourist circuit of the Strada del Vino del Val di Noto, you taste the wines of the company, we make a short course on the techniques of tasting and pairing wine and typical products produced by a sommelier and gastronaut . Here we are in the cellar and we will in this way our second ligth lunch of the day.

In the early afternoon start our journey home and during that we stop to visit the only water mill still working in Sicily where it still produces a special flour for making bread, pizza and Sicilian sweets

Our day ends here and you'll be in your residence before 5.00 pm.
